Holiday Wine Dinner

featuring Darioush Winery

1st Course | 2013 Signature Chardonnay - Vivid and aromatic notes of nectarine, green apple and citrus blossom lead to sleek and refined flavors of stone fruit and guava with a mineral quality in the lingering finish. The oak is beautifully integrated and broadens the wine with hazelnut and crème brûlée.

Beet and Endive Salad - vanilla bean vinaigrette | toasted hazlenuts

2nd Course | 2012 Signature Merlot - The wine is packed with juicy dark fruit and aromatic notes of chai tea, cinnamon, fennel and bittersweet cocoa. The broad and generous palate features sweet black plum, dried blueberry, anise and intriguing woodsy notes of fresh tobacco, smoke and spice.     

Classic Bouillabaisse - fish stew | country bread | rouille

3rd Course | 2012 Malbec Capataz - Hints of sweet tobacco, milk chocolate, and violet add complexity to the solid core of dark cherry and raspberry. This is a deeply saturated wine with smooth tannins and a lingering, viscous finish.

Oven Roasted Quail - mushroom stuffing | red wine | currant jus 

4th Course | 2012 Signature Cabernet Sauvignon - Rich and dense on the palate with blackberry, dried fig and anise flavors, the wine is enhanced by savory and earthbound elements of dried sage and French roast coffee.
Slow Roasted Venison - creamy polenta | cabernet reduction

1st Course | Carpene Malvolti, Prosecco - Dry, delicate pear fruit with a full, pleasant finish. Fresh & appealing

2nd Course | 2012 Gavi di Gavi, Battistina - Fragrant acidity and elegant minerality on the palate with a succulent citrusy and almondy finish

3rd Course | 2009 Palagetto Sottobosco - 80% Sangiovese from Montalcino, 10% Cabernet Sauvignon, 10% Syrah; Youthful, fresh dark fruits, generous and very mouth filling with a gentle oak finish

4th Course | 2008 Corte Rugolin, Amarone Classico Crosara de le Strie - 40% Corvina, 20% Corvinone, 20% Rondinella, 20% Native Varietals; This classic style of Amarone is rich showing notes of ginger, tobacco and wild cherry. It is the perfect balance between acidity, fruit and tannin, therefore allowing it to age for 10+ years.

5th Course | Russo, Nocino - Infusion of green walnut hulls in pure alcohol for 60 days. Rich walnut with a slight bitter undertone. After dinner drink and as a "digestivo"
